We are seeking a creative, detail-oriented, and highly organized Cold Kitchen Chef to join our culinary team. The ideal candidate will be responsible for preparing and presenting cold dishes, including salads, appetizers, terrines, cold meats, canapés, and buffet platters with consistency and flair. This role requires a strong eye for presentation and a passion for fresh, high-quality ingredients.
Role and Responsibilities:
Prepare a variety of cold dishes such as salads, charcuterie, dressings, sauces, hors d’oeuvres, and more.
Plate and present cold food items in an appealing and artistic manner.
Ensure freshness and proper storage of all ingredients, following food safety standards.
Collaborate with other chefs to plan and execute menu items and seasonal offerings.
Maintain a clean and organized workstation at all times.
Monitor inventory and assist with ordering supplies for the cold kitchen section.
Assist in training junior kitchen staff in cold kitchen techniques and standards.
Follow portion control guidelines and minimize waste.
Stay current on trends in cold cuisine and contribute creative ideas for new dishes.
Physical Requirements:
Ability to stand for long periods.
Work in cold environments (walk-ins, refrigerators) as needed.
Diploma or certification from a recognized culinary school preferred.
Minimum of 2–3 years of experience in a similar role within a professional kitchen (hotel, restaurant, or catering).
Strong background in cold food preparation, presentation, and preservation techniques.
Expertise in preparing salads, appetizers, dressings, terrines, charcuterie, and other cold items.
Excellent knife skills and precision cutting.
Knowledge of plating and garnishing for visual appeal.
Understanding of portion control and food cost efficiency.
Familiarity with food safety and sanitation standards (HACCP or equivalent).
Creativity and attention to detail, especially in food presentation.
Strong organizational and time-management skills.
Ability to multitask and work efficiently under pressure.
Team player with good communication skills.
